Luckily for me, a lot of work has been done on hacking the Wii Fit board. There were a few however that stood out.

User mit-mit created a good starting point for using the board as a scale and provided a few links to their process. Their actual website can be seen here.

Going further down the rabbit hole led me to this site, which essentially walks through how to connect the Wii Fit Board to a Raspberry Pi and visualize the center of the push as well as the strength. The idea from here will be to extract the variables that are already being captured and place them in a GUI of my own design.
